A genuine Edinburgh institution, long favoured by locals and savvy travellers, The Basement is reaping the benefits of a though refurbishment and a change of tack when it comes to food and drink. Mexican and South American flavours now dominate the menu in the bar and separate dining area, so expect a full roster of spicy ideas ranging from ceviche and huevos rancheros to quesadillas, sizzling fajitas and conchinita pibil (slow-cooked pork belly with chorizo, morcilla, pickled onion and three-bean salad). Guacamole is blended to order at the table, and desserts include a churros ice-cream ‘sandwich’. Drinks also pick up on the theme with plenty of Mexican beers, Tequila-based cocktails and palate-cleansing sangritas on offer. Expect a riot of colourful ethnic artwork, a wall of potted plants and Aztec-style fabrics as a backdrop to proceedings.
