Chef Tom Simmons is known for his culinary vision which reflects his childhood growing up in Wales, with a deep respect for nature and the seasons, influenced by memories of foraging, harvesting vegetables from the garden at his family home and exploring fresh produce at farmer's markets with his mother. In 2017, he opened his first restaurant in London, but now it's time for his homecoming, as he opens a beautiful, up-market restaurant in Cardiff.
The menu is inspired by both modern British and French cooking, but really showcases the best of Welsh ingredients and acts as love letter to land that he, and his partner Lois, call home. Simmons works with a host of local farmers and growers and operates a transparent supply chain to ensure all produce is as local, fresh, seasonal and ethically-sourced as possible.

Located on the first floor, the exclusive space is called Pontcanna and can be all yours. With capacity for up to 38 people, from Tuesday to Saturday, it's an ideal location for gatherings big or small.
In terms of menus, you can either choose from the selection of menus available - including a four-course set or taster - or, ask the chef to create something entirely bespoke for you. To give you a flavour of what to expect, the (current) tasting menu begins with mushroom parfait with black garlic and sourdough, followed by dayboat fish with leek fondue, champagne sauce and cucumber, as well as Welsh saddle of lamb with stuffed morel, asparagus and wild garlic.
