Tom Simmons is a chef that has been inspired by the rich variety in British cuisines and his life lived in Pembrokeshire. Enter, Thomas by Tom Simmons. Born and bred in Wales, Tom developed a real passion for local nature and produce, and throughout his life, honouring the ingredients and techniques that he was surrounded by became part and parcel of Tom's work. Joined by his partner Lois, Tom has been leading his successful flagship in Tower Bridge since 2017, but after three years based in the capital, the pair came home to open Thomas by Tom Simmons, the chef's first restaurant in Wales.
Based in beautiful Pontcanna, a cultural hub of Cardiff's city centre, Thomas by Tom Simmons is an excellent backdrop for any special occasion or upcoming event. Whilst the upper floor of this Cardiff restaurant is always available for your events and parties, Tom has been known to hire out the whole restaurant for those extra special dos. The upper floor space, though, is suitable for all sorts of events – from birthday celebrations to conference lunches.
Tom and his team will always work with you in order to create a menu perfect for your event, but you're always able to choose from the restaurant's standard menu. And believe us, there is nothing standard about it. Kick start your party with a round of Miami cocktails, made with gin, fresh lemon and rose champagne. Your guests can start on an Isle of Wight tomato tart with whipped crowdie and saffron before enjoying a main of fish and chips. Not just any chip shop style fish, this is Tom's take, with pea puree, batter bits and warm tartare sauce.
